SOILS
Our vineyards have an almost absolute predominance of calcareous clay soils (brown soils) and basic pH. These soils developed on Neogene and Miocene marls and clays due to colluvial (mainly from the mountains) and alluvial formation. Some developed on sandstone plains and are shallow, flat, stony, limy, and loamy textured. Others are located on slopes, developed on marls; these are moderately deep, with slight slopes and few stones, calcareous and fine loam textured.
CLIMATE
Mediterranean with continental influence. Low rainfall {400 mm average annual rainfall). Dry summers and long, harsh winters with marked thermal oscillations throughout the seasons.
VINEYARDS
Very old vineyards on very poor soils The age of the vines and their location allows us to maintain the tension and freshness of wines, keeping their natural acidity and obtaining wines with a great capacity for ageing. The result is the maximum expression of the terroir together with an excellent balance between factors such as minerality, fruity and acidity.
WINEMAKING
Hand-picked grapes in boxes that are then cooled and stored for 12 hours at 5ºC before being selected on the sortng table before vinificaton.
Cold pre-fermentative maceration before the alcoholic fermentation with indigenous yeasts. Malolactic fermentation with bâtonnage (no pumps) in French oak barrels of 225 l. as well as concrete egg-shaped vats.
TASTING NOTES
This wine is unique and exclusive, it has a layer of color very intense, very complex aromas, with a range of smells very varied, spicy, balsamic, black licorice, appearing after sweet tons of cocoa and toffee notes. In he palate it is full, comprehensive, with great structure, while balanced and tasty. Has a very long final and expressive
