As well as a wonderful area for obtaining the highest quality EVOOs, the Sierra de Espadán is acknowledged to be one of the areas in the world with the most ancient olive trees.

Alto Palancia region of Castellón
The Alto Palancia has a typically Mediterranean climate, with mild temperatures stabilised by proximity to the sea, autumn and spring rains, and dry summers and winters. Most of Alto Palancia is located in the transitional strip between the climates of the northern coastal plain and the inland regions, with intermediate characteristics in terms of rainfall (550 mm per year) and temperature (13ºC on average).
Harvested when green, by hand or with vibrating harvester.
Continuous two-phase system with cold extraction at 20º C. The system is centrifugal or continuous. The beaten paste is centrifuged in a two-phase decanter to obtain the oil, vegetable and pomace.
Clean and bright, and intense green in colour.
The nose is complex, with aromas of green olives, green apple, almonds and ripe tomato.
It enters the mouth well, with a balanced sweetness, spiciness and slight bitterness. There is a retronasal aroma of freshly cut grass, sweet almonds, tomato and green banana. Well-balanced acidity.
