CLIMATE
The Alto Palancia has a typically Mediterranean climate, with mild temperatures stabilised by proximity to the sea, autumn and spring rains, and dry summers and winters. Most of Alto Palancia is located in the transitional strip between the climates of the northern coastal plain and the inland regions, with intermediate characteristics in terms of rainfall (550 mm per year) and temperature (13ºC on average).
HARVESTING SYSTEM
Harvested when green, by hand or with vibrating harvester.
METHOD
Continuous two-phase system, with cold extraction at 20º C. The system is centrifugal or continuous. The beaten paste is centrifuged in a two-phase decanter to obtain the oil, vegetable and pomace.
TASTING NOTES
Clean and bright, and intense green in colour.
Strongly fruity. The nose is complex, with aromas of green olives, green apple, almonds and fig leaves.
It enters the mouth well, with balanced spiciness and bitterness and retronasal aromas of freshly cut grass, almonds, apple and fig tree. Well-balanced acidity.
