It is made with the traditional method used for ageing sherry wines, with stacked criadera and solera barrels. Half of the reserva solera barrels are initial ageing soleras, with the addition of selected vinegars from our founding solera. The others form the ageing solera, where our vinegar takes on its typical colour and flavour characteristics after the traditional ageing process of 10 years in oak barrels.
Appearance: Very bright and clean, with mahogany shades edged with orange.
Nose: Outstanding for its great complexity based on the esters produced during the years of ageing and the aromatic compounds extracted from the American oak, resulting in an exuberant and very well-balanced whole. With ageing notes of vanilla and nuts.
Mouth: Well-structured and intense, with a very pleasant aftertaste where acidity harmonises with balsamic notes.
None except sulphites and traces of egg white.
