“Made from the ‘Serrana de Espadán’ olive variety, sourced from the Sierra de Espadán and Sierra Calderona in the Alto Palancia region, Castellón, at an average altitude of 350 meters above sea level.
CLIMATE
Typically Mediterranean, with mild temperatures stabilized by proximity to the sea, autumn and spring rainfall, and dry summers and winters. Most of the Alto Palancia region lies in the transition zone, with intermediate climatic characteristics between those of the northern coastal plain and the interior, featuring an average annual rainfall of 550 mm and an average temperature of 13°C.
Harvesting
Manual green harvesting and with a handheld shaker.
Production
Continuous two-phase system with cold extraction at 20ºC. The kneaded paste is centrifuged in a two-phase decanter to obtain the oil, the vegetation water, and the pomace.
Frequent bottling, every 18 months.
Tasting notes
Intense green color, clean and bright. The nose is complex, with aromas of green olives, green apple, almonds, and ripe tomato. On the palate, it has a good entry, balanced, fluid, sweet, slightly bitter, and spicy. The retronasal perception reveals freshly cut grass, sweet almonds, tomato, and green banana. Very well-balanced acidity.
Serving temperature
Pairs especially well with salads, fresh vegetables, fish, desserts, fresh cheeses, sauces, and white meats.
