AOVE Fos Picual

Oil produced by cold extraction, sourced from ancient olive trees in the Sierra de Espadán, of the Picual variety. The Sierra de Espadán, besides being an optimal area for producing the highest quality olive oil, is recognized as one of the regions in the world with the highest number of millennial olive trees.

Typically Mediterranean, with mild temperatures stabilized by proximity to the sea, autumn and spring rainfall, and dry summers and winters. Most of the Alto Palancia region lies in the transitional zone, with intermediate climatic characteristics between those of the northern coastal plain and the inland areas, both in terms of rainfall (550 mm/year) and average temperature (13ºC).
Manual green harvesting and with a handheld shaker.
Continuous two-phase system with cold extraction at 20ºC. The kneaded paste is centrifuged in a two-phase decanter to obtain the oil, the vegetation water, and the pomace. Frequent bottling, every 18 months.
Intense green color, clean and bright. The nose is complex, fruity, with aromas of green olives, green apple, almonds, and fig leaves. On the palate, it has a good entry, presenting a balanced profile with just the right touch of bitterness and spiciness. The retronasal perception reveals notes of freshly cut grass, green almonds, apple, and fig. Very well-balanced acidity.
Perfect over the classic Mediterranean toast with bread and tomato, paired with cooked artichokes or oyster mushrooms. Ideal for sautéing, stir-fries, fried or scrambled eggs, traditional stews, vegetable ratatouille, braises, hearty soups, and rice dishes.
